From the renowned coffee-producing region of Central Valley, Costa Rica, this lot from Francisca and Oscar Chacon is a shining example of innovation and precision in specialty coffee. Grown at 1,500 MASL, this Black Honey processed coffee combines three varietals—Catuai, Caturra, and Villa Sarchi—to create a cup rich in complexity and sweetness.
The Chacons are pioneers of honey processing, and for this lot, they meticulously measure the Brix level of cherries to ensure peak ripeness. After selective hand-sorting, the cherries are depulped and dried with their full mucilage intact. As the mucilage oxidizes, it darkens—imparting deep, fruity flavors and a syrupy body to the final brew.
